Sourced from the renowned Tarrazú region of Costa Rica, this coffee was processed by the legendary Beneficio San Diego Mill, one of the country’s most innovative and forward-thinking mills since 1888. Working alongside dedicated smallholder producers, San Diego continues to push the boundaries of quality, sustainability, and experimental processing while honoring the rich coffee heritage of the region.
This release undergoes a meticulous natural anaerobic fermentation process, beginning with carefully selected cherries harvested at peak ripeness with exceptionally high sugar content. The whole cherries are then sealed in oxygen-free fermentation tanks, where anaerobic activity encourages the development of complex lactic and malic acids. Combined with the natural drying process, this method intensifies fruit expression, enhances sweetness, and creates remarkable depth and clarity in the cup.
Our carefully developed roast profile was designed to showcase the full spectrum of this coffee’s expressive character while maintaining balance and refinement. In the cup, vibrant layers of cherry, raspberry, and orange create a juicy, fruit-forward first impression, followed by floral notes of rose hips that add elegance and complexity. Warming notes of cinnamon and clove emerge throughout the finish, creating a dynamic and continually evolving sensory experience.
The result is a coffee that feels lively, exploratory, and deeply layered—crafted for those who love discovering the outer edges of flavor, processing innovation, and intentional roasting craftsmanship.
