At Origin
High in the volcanic soils of Murang’a County (pronounced roughly “moo-RAHNG-ah”), nearly 900 members of the Thangaini Farmers’ Cooperative Society contribute coffee to the Thangaini Factory. The region’s elevation and cooler temperatures allow cherries to mature slowly, building the sweetness, acidity, and fruit character that make coffees from this part of Kenya so distinctive.
Ripe cherries are handpicked and carefully sorted before being pulped, fermented overnight, washed, and graded by density. The coffee is then slowly dried on raised tables—a meticulous washed process that helps preserve the clarity and definition found in the finished cup.
In the Roastery
This one quickly became a favorite on our cupping table. What grabbed us wasn’t simply how fruity it was, but the way that fruit moves between deeper and brighter expressions: ripe plum and black currant on one side, then that unmistakably juicy gooseberry pop on the other.
We’re roasting it light-medium to preserve that lively character while developing enough sweetness to give everything underneath it some weight. Chocolate and brown sugar create the foundation, allowing all that fruit to shine without the cup becoming sharp or overly delicate.
In the Cup
Chocolate and brown sugar establish a smooth, sweet beginning before the fruit really starts to open up. Plum brings a ripe, rounded richness, black currant adds darker fruit intensity, and gooseberry delivers the bright, juicy pop that makes this coffee so much fun.
As it cools, those flavors become even more articulate, shifting between rich, sweet, tart, and juicy without losing their balance.
