The Glory (and Challenges) of Brewing with the Fellow Aiden

The Fellow Aiden Precision Coffee Maker has quickly become our go-to for both single-serve and batch brewing, at home and in our lab. Its precision, versatility, and programmability make it perfect for coffee enthusiasts who want consistent, high-quality coffee without the constant focus that manual pour-over requires.

We’ve personally bought machines for both lab and home, and we also stock them for web sales. We want to show you what’s possible with this machine, help anyone struggling with it, and make it easy to get the best results at home. (Checkout Aiden Here)

Why We Love the Aiden

We’re coffee snobs. We obsess over the subtle notes in specialty-grade coffee, like sweetness, clarity, and nuance. For years, we relied on manual pour-over to hit that level of precision.

Compared to Manual Pour-over Manual pour-over gives you control over every variable, like water ratio, bloom time, number of pulses, pulse intervals, and temperature, but it requires full attention and focus. Aiden gives you that same control while automating the process, so you can enjoy precision without standing over the kettle. Whether you use a preprogrammed profile, tweak one of ours, or make your own, you can manage each step without the constant handwork.

Guided, Hands-Free Brewing

Even if you’re new to specialty coffee, Aiden’s guided programs make brewing easy. You choose the roast level and cup size, and the machine walks you through:

  • Which basket to use

  • How many grams of coffee to add

  • When to start

After you press “Start Brew,” Aiden takes over. You get pour-over quality without having to babysit your coffee. Checkout a quick flyover on brewing one cup here

Perfect for Your Coffee Workflow

As a roaster, I test multiple coffees to refine roast profiles. With manual pour-over, distractions can ruin a batch. Now, I use a custom Virtuous Cycle Profile (download our test profile here) for repeatable, predictable results. Measure, add water, start the brew. Rinse and repeat. Consistency is effortless.

Single-Serve Pour-over Solves the K-Cup ProblemK-Cups are convenient but compromise quality. Aiden lets you brew 1–3 cups with pour-over precision, straight into your mug or a carafe. You can enjoy fresh coffee, properly extracted, without having to mask bitterness or sourness with milk or sugar. Learn more about why single-serve pour-over beats K-Cups.

Builds Confidence for New Coffee Enthusiasts

If you pair Aiden with one of our downloadable profiles, you know you’re tasting the coffee as it’s meant to be experienced. For example, if you have found your coffee to be too strong for your liking try our Colombian Comfort Coffee with the Virtuous Classic Batch Profile (download here) for a smooth, balanced cup.

Tips for Overcoming Common Challenges

Some users run into issues, usually because of:

  1. Over-roasted or commodity coffee

Aiden is built for coffee enthusiasts using specialty-grade beans. Lower-quality beans extract faster and can taste bitter, especially in larger batches. Learn more about specialty vs. commodity coffee.

  2. Efficiency of the Aiden

Even specialty coffee can taste strong if you’re used to weaker brews, which is actually an opportunity to adjust grind size or dosing.

We’ve seen this in practice and created the Virtuous Classic Batch Profile (download here) so you can try a profile that may be more aligned with your preferences.

Getting the Most Out of Your Aiden

Here’s a checklist to elevate your coffee game:

1. Coffee Scale

Measure your coffee precisely. Coffee-to-water ratio is critical: too much makes coffee bitter, too little produces sour or hollow flavors. A scale measuring to 0.1g is ideal. (check out this scale)

2. Conical Burr Grinder

Grind size directly affects extraction. Finer grind = more extraction, coarser grind = less. Dark roasts extract faster; light roasts need more encouragement. We recommend:

  • Opus Grinder: Start at 4.5 grind size with any of our coffees or profiles. (Opus Grinder Here)

3. Good Water

Great coffee starts with great water. Avoid tap water with off flavors or heavy minerals. Recommended:

  • Filtered water with natural minerals (Brita or fridge filter)

  • Avoid purified or RO water—they lack minerals needed for proper extraction.
